Butcher's Tip: For burgers, handle the meat as little as possible — overworking ground beef makes it dense. Season just before cooking. A hot griddle or cast iron gives the best crust.
Our house blend for serious burgers. We grind fresh brisket and short rib together in-house, The brisket brings a clean, beefy backbone while the short rib contributes the rich marbling and fat content that makes a burger extraordinary. Our house Bolognese meatball blend is our specialty and local favorite for decades. Just try it and you will know why. We mix the perfect ratios of fresh-ground beef, pork, and veal. The trinity of proteins produces a meatball that is rich without being heavy, tender without falling apart, and deeply flavored without overpowering a great tomato sauce.

Butcher's Tip: Because it's leaner, ground sirloin benefits from added moisture in meatball and meatloaf recipes. Don't overcook — it dries out faster than 80/20.
A rich burger blend combining beef short rib and brisket, two cuts known for deep beef flavor and generous fat. The short rib brings richness and marbling, while brisket adds a robust, beef-forward character. Together, they make a juicy, flavorful patty well suited for a hard sear on the grill or cast-iron skillet.
Note: Keep refrigerated until ready to cook. Cook thoroughly before serving.

Form: Ground Beef Patties
Rich, beef-forward flavor
Ideal for grilling or cast-iron cooking
Butcher's Tip: Keep the patties cold until you're ready to cook and season the outside just before they hit the heat. Use a hot grill or cast-iron skillet for a good crust, and avoid pressing down on the patties while they cook, which can force out flavorful juices.

Domestic Wagyu ground beef formed into patties in-house. The extraordinary intramuscular fat of Wagyu cattle means a burger that stays remarkably juicy, has a luxurious mouthfeel, and carries a depth of flavor that standard ground beef simply cannot match. A significant upgrade for any burger occasion.

Butcher's Tip: Cook to medium — no further. The fat renders rapidly and the burger becomes greasy if overcooked. Minimal toppings recommended — the beef is the feature.
Wagyu Ground Beef – Domestic

High marbling | Rich flavor
Fresh never frozen
Butcher's Tip: Use in burgers, meatballs, or meat sauces. The higher fat content means less shrinkage during cooking and significantly more flavor. Less seasoning needed.
Ground Bison – Grass-Fed
Ground fresh from grass-fed bison — a lean, richly flavored alternative to ground beef with a clean, slightly sweet flavor and significantly lower fat content than conventional beef. Bison is one of the most nutritionally dense red meats available: higher in protein, lower in fat, and free of the hormones and antibiotics common in conventional beef production.

Bison | Grass-fed | Ground in-house
Leaner than beef | High protein
Fresh never frozen
Butcher's Tip: Cook to an internal temperature of 160°F. Bison cooks faster than beef due to lower fat content — pull it 5–10°F earlier than you normally would with beef. For burgers, medium to medium-rare is ideal. High heat for a short time produces the best result.
