A whole suckling pig — sourced young for the most delicate, tender pork available. The skin of a properly roasted suckling pig achieves a crackling that is in a class by itself: paper-thin, shatteringly crisp, and extraordinarily flavorful. The centerpiece of a true feast.
Available by order — please speak to our butchers for availability and sizing. Cut Details
Whole | Available by order Approximately 15–30 lbs depending on availability Fresh never frozen
Butcher's Tip: Dry the skin thoroughly overnight uncovered in the refrigerator. Rub inside and out with salt, garlic, and herbs. Roast at 450°F for the first 30 minutes to blister the skin, then reduce to 325°F until the internal temperature of the thickest part (shoulder) reaches 165°F.
